Derived from a Portuguese meat stew, Vindaloo Curry left the Goa region in India and made it’s way to the curry houses of England. ┬áNight Kitchen’s take on this old favorite is a slightly softer version but, we hope, still true to the original. ┬áIt goes great on roasted vegetables or fish and makes a nice twist on scrambled eggs for brunch.
