We make unique culinary spice blends drawing from both regional flavors and the history of how flavors have traveled around the world. Some of our blends work to honor specific regional cuisines or dishes, some are inspired by merging flavors from multiple regions—exploring the history of the spice trade, and others come from flights of fancy—ideas that draw from unique combinations of flavors that have no historical analogue.
Spices and food are inextricably linked. The earliest cuisines relied on complex and contrasting flavors. It wasn’t until spices became widely available to the growing middle class that European cooking moved towards more collaborative and subtle flavors. Our approach to blends and seasonings is to honor history and build upon it, by providing bold flavors that can be incorporated into quickly cooked dishes.
Most spice flavors are highly volatile, so much like with our coffee, our goal is to provide the best flavor we can. Our spice blends and seasonings use the best quality imported spices and sea salts from a set of carefully curated importers who are consistently brining in the best spices from around the world. Wherever possible we use whole spices because they have the best flavor.
Using the finest ingredients, our spice blends never have added salt, sugar, or other additives. Seasonings include salt in a careful ratio to ensure you can maximize the flavor of your dish without over salting. We build blends in-house using a small spice grinder, a scale, and a set of recipes scaled to consistently produce a one pound batch of a spice—this allows us to maintain the quality of the ingredients.
