Our goal is to make sure you get coffee at its peak. Online orders will be shipped via US Priority Mail on the day they are roasted. Typically, we roast and fulfill orders on Fridays.
Great coffee is grown before it can be roasted or brewed. Flavor and quality come from the sun, the soil, the rain, and the work of the farmer—these components make up each coffee’s terroir. Terroir may be the single most influential element in the flavor of a coffee. We are focused on finding great coffees and buying as close to directly from the farm as is possible. This connection ensures that the farmers are getting the best reward for the work that goes into making an exceptional crop. Ultimately, a roaster’s biggest influence on the coffee is not their ability to roast, but their ability to select and source the best coffees.
Small Batch Fluid Bed Roasting
We roast in small batches in a Fluid Bed Roaster. Fluid Bed roasting uses a technique developed at MIT in the 1970’s. Green coffee is roasted in a high velocity heated air column, which has two primary benefits. First, coffee roasted this way is more uniformly exposed to heat. The beans tumble more randomly in the air column than they do in a more conventional drum roaster. Second, heating in a hot air column is more efficient. The beans come to temperature quicker and spend less time under heat. Green coffee needs to get hot enough to fully dry out and to brown, but if the bean spends too much time under heat it bakes rather than roasts. Fluid bed roasting produces coffees that are brighter and fresher then drum roasted coffees.
Peak Aroma and Flavor
We celebrate the unique characteristics that each coffee’s terroir imparts. Rather than light or dark, each of our coffees gets the right roast. A well roasted coffee has the perfect balance of flavor, aroma, and body or mouth feel. The art and science of the roast is in finding that balance. Small batch coffee roasting is about finding the perfect point that showcases the quality of the coffee and not the roaster.
